Smoked Mackerel, Apple & Spicy Beetroot Kraut Salad

We are heading into a winter season and another lockdown. During this tricky times we all would love to be well and nourished, physically and mentally, to stay strong and healthy. Self care, in its different forms, is the best way to keep our body and mind in a good state. High in nutrients food is the main form of self care. 

Good diverse food helps us to keep our immune system resilient to defence colds, viruses and flues, and recover faster from them. 

Fermented food is well known as a probiotic and prebiotic food, that helps to increase the population of good microorganisms in our gut and support the immune system. Raw saurkraut, kimchi, yoghurt, kefir, kombucha should be an essential part of everyday diet.

Many nutritious meals can be made with fermented foods. We are offering you a quick and easy to prepare recipe. It is super delicious, but most of all, it is nourishing to our body versus mind.

Smoked Mackerel, Apple & Spicy Beetroot Kraut Salad


The spiciness and earthiness of the kraut really lend itself to a sweet apple and oily mackerel, and these three things can be enjoyed as is, but the creme fraiche and rye breadcrumbs just add a little extra texture and flavour.

Serves 2

2 fillets smoked mackerel

1/2 granny smith apple

lemon

2 tbsp Spicy Beetroot Kraut

125g watercress

Few sprigs dill

Fresh horseradish 

100g creme fraiche

Olive oil

2 pieces stale rye bread

Salt & pepper


Cut the apple into matchstick-size pieces and put in a bowl of water with half the squeezed lemon. In a small bowl, grate approximately 1/2cm of horseradish into the creme fraiche along with a good squeeze of lemon, salt and pepper to taste. Heat a little olive oil in a pan and crumble in the rye bread, fry until crispy and set aside. Build the salad with watercress, flaked mackerel, apple, dill and drizzle with olive oil and a squeeze of lemon juice. Serve with crispy rye breadcrumbs scattered on top and dollop of creme fraiche.
